Here’s a simple and delicious recipe for pasta with shrimp and feta cheese:

Ingredients

  • 8 oz pasta (spaghetti, linguine, or your choice)
  • 1 lb shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 teaspoon red pepper flakes (optional)
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper, to taste
  • Juice of 1 lemon

Instructions

  1. Cook the Pasta:
  • In a large pot of boiling salted water, cook the pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta and set aside.

2. Sauté the Shrimp:

  • In a large skillet, heat olive oil over medium heat. Add the minced garlic and red pepper flakes (if using) and sauté for about 30 seconds until fragrant.
  • Add the shrimp to the skillet and season with salt and pepper. Cook for about 2-3 minutes on each side until the shrimp turn pink and are cooked through.

3. Add Tomatoes:

  • Stir in the cherry tomatoes and cook for another 2 minutes until they soften.

4. Combine Ingredients:

  • Add the cooked pasta to the skillet, along with the reserved pasta water and lemon juice. Toss everything together to combine. If the mixture seems dry, add a bit more pasta water.

5. Add Feta and Parsley:

  • Remove the skillet from heat and fold in the crumbled feta cheese and chopped parsley. Adjust seasoning with more salt and pepper, if needed.

6. Serve:

  • Plate the pasta and garnish with additional feta and parsley if desired.

Tips

  • You can customize this recipe by adding vegetables like spinach or bell peppers.
  • For added flavor, consider marinating the shrimp in olive oil, garlic, and lemon juice before cooking.
