Glazed Chicken Stir-Fry Delight

One of my favorite dishes to make is the Glazed Chicken Stir-Fry Delight. This meal features tender, juicy chicken pieces tossed with vibrant green peppers and baby corn, all coated in a sweet and savory glaze.

Usually, I serve the meal over a fluffy bed of rice. It is quick and a delicious meal that is perfect for a satisfying lunch or dinner!

Ingredients:

– 1 lb (450g) boneless, skinless chicken thighs or breasts, sliced

– 1 tablespoon vegetable oil

– 1 cup green peppers, sliced (any color)

– 1 cup baby corn, drained (canned or fresh)

– 2 cups cooked rice (white or brown)

For the Glaze:

– ¼ cup soy sauce

– 2 tablespoons honey

– 1 tablespoon rice vinegar (or apple cider vinegar)

– 1 teaspoon minced garlic

– 1 teaspoon grated ginger (optional)

– 1 tablespoon cornstarch mixed with 2 tablespoons water (optional for thickening)

Glazed Chicken Stir-Fry Delight

Instructions:

  1. Prepare the Glaze: In a small bowl, whisk together the soy sauce, honey, rice vinegar, minced garlic, and ginger. Set aside.
  2. Cook the Chicken: Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the sliced chicken and cook for about 5-7 minutes, or until fully cooked and lightly browned.
  3. Add Vegetables: Stir in the green peppers and baby corn. Cook for an additional 3-4 minutes until the vegetables are tender-crisp.
  4. Add the Glaze: Pour the glaze over the chicken and vegetables. Stir to coat everything evenly. If you want a thicker sauce, add the cornstarch mixture and stir until it thickens.
  5. Serve: Serve the glazed chicken stir-fry over a bed of cooked rice. Enjoy!

Tips:

Feel free to add other vegetables like broccoli, carrots, or snap peas for extra color and nutrition. For a bit of heat, add red pepper flakes or sliced chili peppers to the glaze!
