– ½ cup pesto (store-bought or homemade)
– 1 cup diced tomatoes (fresh or canned)
– Salt and pepper to taste
– Lemon wedges for serving (optional)
How Do You Make Pesto Garlic Salmon with Broccoli Medley
Instructions:
- Preheat the Oven: Preheat your oven to 400°F (200°C).
- Prepare the Broccoli: In a large bowl, toss the broccoli florets with 1 tablespoon of olive oil, minced garlic, salt, and pepper. Spread the broccoli on a baking sheet in a single layer.
- Prepare the Salmon: Place the salmon fillets on the same baking sheet or a separate one. Season with salt and pepper, then spread a generous layer of pesto on top of each fillet.
- Bake: Bake the salmon and broccoli in the preheated oven for about 15-18 minutes, or until the salmon is cooked through and flakes easily with a fork, and the broccoli is tender.
- Add Tomatoes: In the last 5 minutes of baking, add the diced tomatoes around the salmon and broccoli to warm them up.
- Serve: Remove from the oven and serve immediately. Garnish with lemon wedges if desired.
