– Salt and pepper to taste

– Lemon wedges for serving (optional)

How Do You Make Pesto Garlic Salmon with Broccoli Medley

Instructions:

  1. Preheat the Oven: Preheat your oven to 400°F (200°C).
  2. Prepare the Broccoli: In a large bowl, toss the broccoli florets with 1 tablespoon of olive oil, minced garlic, salt, and pepper. Spread the broccoli on a baking sheet in a single layer.
  3. Prepare the Salmon: Place the salmon fillets on the same baking sheet or a separate one. Season with salt and pepper, then spread a generous layer of pesto on top of each fillet.
  4. Bake: Bake the salmon and broccoli in the preheated oven for about 15-18 minutes, or until the salmon is cooked through and flakes easily with a fork, and the broccoli is tender.
  5. Add Tomatoes: In the last 5 minutes of baking, add the diced tomatoes around the salmon and broccoli to warm them up.
  6. Serve: Remove from the oven and serve immediately. Garnish with lemon wedges if desired.

Tips:

– Feel free to add other vegetables, like bell peppers or zucchini, to the medley.

– Serve over rice or quinoa for a complete meal!
