My mornings and brunch are usually packed, and finding time for a proper meal can be a real challenge.

Add to that, the fact that I love freshly made meals and prepped dishes do not get my appetite going, and you have a time challenge problem.

A couple of years ago, after a hectic morning, I was hungry and needed something quick. At the time, I was watching my weight and trying to eat clean.

Looking through the ingredients in my fridge, I threw together this Mediterranean Flatbread Pizza.

It’s now my go-to brunch recipe when I’m short on time but craving something flavorful and wholesome.

What I love most about this dish is the minimal prep required. With just a few minutes of baking or air frying it’s the perfect dish for busy schedules.

For this recipe, I will be using carb balance tortillas as the base.

What Ingredient Do You Need for the Healthy Mediterranean Flatbread?

To get started, you will need your base. You can use any flatbread of your choice but I prefer to use tortillas.

You will need to purchase a few other ingredients including salsa, arugula, cherry tomatoes, brown olives, feta cheese, and mozzarella.

There are also some optional ingredients or substitutes you can add but these are the main ones I typically use.

How Do You Make Mediterranean Flatbread?

Once I have chose my tortillas, I begin by spreading a thin layer of salsa on them.

Sometimes, if I have an hour to spare, I make my own sauce otherwise, I use salsa for the kick.

Using a spoon, I make sure to leave a small border around the edges to mimic the look of a pizza crust.

Next, I add a handful of arugula to each tortilla. For this part, it really depends on how much you want on it. What I do is I add different sizes on each tortilla to see how it will turn out.

Next step is to add the cherry tomatoes. I usually cut them in half and then scatter them on top of the arugula.

Then I slice the olives and add them between the tomatoes.

I usually place a slice of Mozzarella in the middle of the Tortilla as the center piece.

Finally, I sprinkle crumbled Feta Cheese on the tortillas.

The next step is to bake in an oven or an air fryer, depending on what’s most convenient. If I have multiple tortillas to bake at once, then I usually use the oven.

On the other hand, when I making this dish for myself, I usually go with the air fryer. For this recipe, I used the air fryer.

Ingredients
  

  • 1 carb-balanced tortilla (or any flatbread of your choice)
  • 2 tbsp salsa (for the base)
  • A handful of arugula
  • 5-6 cherry tomatoes, halved
  • 5-6 brown olives, sliced
  • 2 tbsp feta cheese, crumbled
  • 1 slice of fresh mozzarella (or 2 tablespoons shredded mozzarella)
  • Olive oil, black pepper, or dried oregano for garnish optional

Instructions
 

Oven Method:

  • Preheat the oven to 375°F (190°C).
  • Place the tortilla on a baking sheet lined with parchment paper.

  • Spread the salsa evenly over the tortilla using a spoon, leaving a small border around the edges.

  • Layer the toppings: Add a handful of arugula, the halved cherry tomatoes, and sliced brown olives. Sprinkle the crumbled feta cheese over the top and place the fresh mozzarella slice (or shredded mozzarella) in the center.

  • Bake for 8-10 minutes, or until the edges of the tortilla are crisp and the cheese has melted.

  • Garnish with olive oil and a sprinkle of black pepper or oregano if desired.
  • Remove the flatbread from the oven with tongs or a spatula, cut into slices, and enjoy immediately.

Air Fryer Method:

  • Preheat the air fryer to 375°F (190°C) for 2-3 minutes.
  • Place the tortilla on a piece of aluminum foil or parchment liner cut to fit the air fryer basket or tray.

  • Spread the salsa evenly over the tortilla using a spoon, leaving a small border around the edges.

  • Layer the toppings: Add a handful of arugula, the halved cherry tomatoes, and sliced brown olives. Sprinkle the crumbled feta cheese over the top and place the fresh mozzarella slice (or shredded mozzarella) in the center.

  • Carefully place the tortilla in the air fryer basket or tray and cook for 5-6 minutes, checking occasionally, until the tortilla edges are crispy and the cheese is melted.

  • Use tongs to remove the flatbread from the air fryer, cut into slices, and enjoy while warm.

Notes

Tips:

Air Fryer Size: If your air fryer is small, use smaller tortillas or cut the flatbread into halves to fit.
Customization: Add toppings like roasted red peppers, artichoke hearts, or sun-dried tomatoes for extra Mediterranean flair.
Quick Clean-Up: Use parchment or foil in the air fryer to prevent sticking and for easy cleanup.
Pairing: Serve with a side of fresh fruit or a light salad for a complete meal.
