- 1 kg Goat meat (cut into small pieces)
- 2 tbsp ground crayfish
- 4-6 Fresh chili peppers (adjust to taste, blended or chopped)
- 1 tbsp ground uziza seeds (optional)
- 1 large onion sliced
- 2 cubes seasoning (e.g., Maggi or Knorr, Dash)
- 1 handful scent leaves (substitute with basil if unavailable)
- Salt to taste
- 1 Prekese or Yanghanyanghan (optional)
- 2-3 Selim peppers (uda pods):
- 2 Garlic cloves (minced, optional)
- 1 tsp Black pepper
Prepare the Goat Meat
Wash the goat meat thoroughly under running water.
Place the goat meat in a large pot. Add half of the sliced onions, seasoning cubes, black pepper, and a pinch of salt.
Add enough water to cover the meat and boil for 20-30 minutes, or until the meat is tender.
Add Pepper Soup Spices
Once the goat meat is tender, add the calabash nutmeg, selim peppers, and prekese if using.
Add the ground crayfish and blended chili peppers.
Pour in additional water if needed to create enough soup for serving. Allow the soup to boil for another 10-15 minutes to let the spices infuse.
Final Seasoning
Taste and adjust seasoning with salt or more chili as needed.
Add the remaining onions and minced garlic (optional) for added flavor.
Finally, add the scent leaves (or basil) and simmer for another 2-3 minutes.
Serving Suggestions
Serve hot as a starter or main dish.
Pair with boiled yam, plantains, rice, or just enjoy it on its own.
