Zobo Recipe (Nigerian Drink)

Zobo drink, also called Sorrel or hibiscus drink, is simple to prepare and refreshing. This recipe is quick and uses only a few ingredients. It is made from the sepals of the hibiscus sabdariffa plant.

  • Wooden spoon
  • Fine mesh sieve or cheesecloth
  • Knife and cutting board
  • Blender optional, for blending pineapple or ginger

Ingredients
  

  • 2 cups dried zobo leaves (hibiscus petals)
  • 1 medium pineapple (peeled and diced)
  • 2 cups fresh watermelon (cubed, seeds removed)
  • 1-2 tbsp cloves
  • 1 large piece of fresh ginger (peeled and grated)
  • 4 cups water
  • 1-2 cups sugar (adjust to taste)
  • 1 orange or lemon Optional (for a citrusy kick)
  • Fruit juice or flavorings like pineapple, orange, or blackcurrant juice Optional

Instructions
 

Prepare Ingredients:

  • Rinse the dried Zobo leaves under cold water to remove dirt or dust.

  • Dice the pineapple and cube the watermelon, removing seeds if needed. Grate the ginger.

Boil the Base:

  • In a large pot, combine the Zobo leaves, pineapple, ginger, and cloves with 4 cups of water.
  • Bring the mixture to a boil over medium-high heat, then reduce the heat and let it simmer for about 20-30 minutes. Stir occasionally.

Blend the Watermelon:

  • While the zobo base simmers, blend the cubed watermelon until smooth. Strain the watermelon juice through a sieve to remove any pulp.

Combine and Cool:

  • After the zobo base has cooled to room temperature, strain it through a fine mesh sieve or cheesecloth into a clean bowl to remove solids.
  • Mix the strained zobo with the watermelon juice.

Sweeten and Flavor:

  • Add sugar to the combined drink and stir until dissolved. Adjust sweetness to taste.
  • Add orange or lemon juice for extra flavor, if desired.

Chill and Serve:

  • Pour the zobo into bottles or pitchers and refrigerate until cold.

  • Serve chilled over ice, and garnish with fresh watermelon slices or mint leaves for a refreshing touch.

Tips for the Perfect Zobo

  • For a healthier version, replace sugar with honey or other natural sweeteners.
  • Blending the watermelon and pineapple together before adding to the drink.
